About

The name BRENDOS is a throwback nickname given to me (Brendan Banks) during my early days in my father’s restaurants, originating from the chefs at TJ Pooles located in Mineola. As a kid who always wanted to be a chef, I sat back, watched, and learned.

The action and excitement of the lunch and dinner rush drew me in, and I was hooked! I started working as a weekend dishwasher and inventory stock boy at age 11. Shortly after, I finally became a cook. Throughout my teenage years, I worked in restaurants, and I needed a change after high school, so I joined the US Army. I served four tours in Iraq and Afghanistan, and at age 26, I was honorably discharged as a staff sergeant.

Back to the restaurant life, I went. I worked in Ll and NYC, learning new cuisines. Then I became a chef and part-owner of successful burger-themed restaurants on Long Island. But my true love is sandwiches, specifically heroes. My goal is to bring you food with attitude. Everything is fresh, top quality, and exciting.
